Pumpkin Cookies with Brown Sugar Glaze

These pumpkin cookies with a brown sugar and vanilla glaze are a family favorite that has been handed down in my family. I remember requesting them from my mom the moment the leaves started to turn and now my three daughters make the same request.Â

Fall Family Treat
Fall is my favorite season, hands down. I love the crisp air, the various colors of changing leaves, and the comfort food we swapped out for lighter meals during spring and summer. And with that comes all the pumpkin and apple-inspired treats.
Of course, autumn is also the start of a new school year and both our family calendar and the HARBORNEST event schedule fills up quick! Take it from me, these cookies are the perfect addition to any event or gathering.

Easy Pumpkin Cookies
The glaze on these cookies make it seem like you’re a master baker, when in reality they are extremely simple to make. The only portion of the process that takes time is the cookie-cooling time (a requirement to get that perfect glaze.)
You can go from mixing all the ingredients, to scooping the dough onto (greased or lined) cookie sheets in a matter of minutes.
These cookies are a fan favorite at the girls games, an after dinner treat, and grown-up gatherings with friends.
Pumpkin Cookies with Brown Sugar Glaze Recipe
- In a medium bowl, cream together shortening and sugar until smooth.
- Add pumpkin, egg, milk, and vanilla to cream mixture.
- In a separate bowl, mix together dry ingredients. Gradually add dry ingredients to cream mixture. Mix well. Optional: add raisins and/or nuts
- Preheat oven to 350 degrees. Drop dough by rounded tablespoons onto cookie sheet. Bake for 10-12 minutes. Do not over bake. Cool completely before starting next step
- To make glaze, melt butter in a medium saucepan. Stir in brown sugar and milk. Reduce heat and boil gently for 2 minutes. Remove from heat and mix in vanilla and powdered sugar. Spread each cooled cookie with glaze.

Pumpkin Cookies with Brown Sugar Glaze

Cookie Dough
- 2 cups shortening
- 2 cups sugar white granulated
- 1 15 oz can of pumpkin
- 2 eggs
- 3 tbsp milk
- 2 tsp vanilla extract
- 2 tsp baking soda
- 2 tsp cinnamon
- 1 tsp salt
- 4 cups flour
Glaze
- 1/2 cup butter
- 1 cup brown sugar
- 6 tbsp milk
- 2 tsp vanilla extract
- 2 cups powdered sugar
Optional Additions to Dough
- 2 cups raisins
- 1 cup chopped nuts
Instructions
Cookie Dough
- In a medium bowl, cream together shortening and sugar until smooth.
- Add pumpkin, egg, milk, and vanilla to cream mixture.
- In a separate bowl, mix together dry ingredients.
- Gradually add dry ingredients to cream mixture. Mix well.
Optional:
- Add raisins and/or chopped nuts
Baking
- Using a large spoon or cookie scoop (about 1 1/2 tablespoons dough,) drop mounds onto a lightly greased cookie sheet leaving about 2-3 inches between each cookie dough mound. If desired, slightly flatten each mound (press down about 1/2 inch to flatten the top a bit).
- Bake at 350 degrees for 10-12 minutes. Cool on the pan for about 5 minutes before transferring to a cooling rack to cool completely.
Glaze Instructions
- Once cookies have cooled completely, begin making glaze by melting butter in a medium sauce pan.
- Stir brown sugar and milk into melted butter. Reduce heat to medium-low and boil gently for 2 minutes.
- Remove from heat and pour into a large bowl. Mix in vanilla and powdered sugar.
- Spread each cooled cookie with glaze.
Notes
- Add extra milk if needed to keep glaze soft enough to spread
